Scones

There are smells and flavors that transport us back in time, which we associate with happy, light moments. The smell of the scones in the oven and their taste while still warm remind me of the afternoons when I would gather my friends at my house. Those were afternoons of great laughter and good mood. Although most of the times we accompanied the scones with very hot tea, as tradition dictates, we were daring (crazy?) enough to, on one occasion, taste them with a (too) strong caipirinha (Brazil's national cocktail). Yes, scones and caipirinha apparently don't go together, but that's the beauty of friendship: it makes us appreciate the unusual.


These scones are so fluffy on the inside and crunchy on the outside! Impossible not to love them!


Ingredients (for 6 scones):

125 gr (4.41 oz) wheat flour

125 gr (4.41 oz) whole wheat flour

100 ml (3.38 fl oz) unsweetened oat milk

30 gr (1.06 oz) vegetable margarine

50 gr (1.76) sugar

1 Tbsp ground flaxseed

3 Tbsp hot water

2 tsp baking powder

1/2 tsp baking soda

1 pinch of salt

1 Tbsp olive oil for brushing

1 pinch of sugar for sprinkling


Instructions:

- Preparation of the flaxseed "egg": in a small bowl, place the flaxseed and hot water. Stir vigorously and let it rest until it gains a gum-like texture.

- In a large bowl, add the flour, margarine, oat milk, sugar, baking powder, baking soda, salt and the flaxseed "egg". Mix very well, until you get an homogeneous dough.

- Distribute the dough between six individual non-stick individual forms. Brush the top with a a bit of olive oil and sprinkle with sugar.

- Bake in a preheated oven at 180ºC (356ºF) for 15 minutes, or until golden.


Tip: The scones go very well with homemade red fruit jam.
