Banana and carob cake

Chocolate cake? Not really! Made with bananas and carob, without refined sugar, this is the cake you'll always want to have for a healthy mid-morning or afternoon snack. Fluffy and moist, it's absolutely luscious. It's very simple to make, so there's no excuse not to try it.
Ingredients:
2 very ripe bananas
1 cup of pitted dates
1 cup of unsweetened oat milk
6 Tbsp of olive oil
1 Tbsp of chia seeds
3 Tbsp of hot water
1.5 cups of wheat flour
1/2 cup of carob flour
1/2 tsp of. ground cinnamon
1 Tbsp of baking powder
1/2 tsp of baking soda
2 handfuls of walnuts
Instructions:
- Peel the bananas. Cut the bananas and dates into pieces.
- Grind the bananas and dates together with the milk and olive oil until you get a homogeneous mixture. Then, pour it into a large bowl.
- In a small bowl, place the chia seeds and hot water. Mix very well until a gum forms. Then pour it into the large bowl.
- Add the wheat flour, the carob flour, the cinnamon, the baking powder and the baking soda to the banana cream. Mix everything very well with a spatula. When you have obtained a lump-free dough, pour the dough into a pan lined with parchment paper.
- Coarsely chop the walnuts and distribute the pieces evenly throughout the cake.
- Take the cake to a preheated oven at 180ºC (356ºF) for 45-50 minutes. Before removing the cake from the oven, check with a toothpick in the center of the cake whether the dough is already cooked. If necessary, leave the cake in the oven for a few more minutes.
