Acorn and sun-dried tomato pâté

January is the month dedicated to veganism (#Veganuary), so it's time to get creative and try new plant-based foods! Have you ever tried holm oak acorn? Most probably not. Even in Portugal, where holm oaks are very common, most people never did. They are very nutritious and healthy, as they contain a lot of fiber and protein. On top of that, they are gluten free!
As proof that it is possible to make simple but gourmet recipes with unconventional ingredients, I leave you with this suggestion of acorn and sun-dried tomato pâté. Prepare some toasts, spread some of this pâté on top and enjoy its rich flavor and smooth texture.
Ingredients:
1 cup acorn (already without the shell and boiled*)
1 tsp sweet chili powder
black pepper to taste
1/4 tsp salt
2 Tbsp extra virgin olive oil
1/4 tsp garlic powder
2 sun-dried tomato petals
Instructions:
- In a food processor, place all the ingredients, except for one of the dried tomato petals. Grind well until you get a homogeneous paste. Transfer the paste to a bowl.
- Cut one of the tomato petals into pieces, add them to the acorn paste. Gently mix everything.
- Place in sterilized containers.

*How to boil acorns?
- Remove the shell of the acorns.
- Put water in a pan. When the water is boiling, add the acorns and let them cook for 20/25 minutes.
- Drain the water. Place the acorns on a cloth and rub them so that the skin comes off. Waste the skin.
