Little soft cakes

If you crave for a little sweet every time you have a coffee, then we are in tune! These small cakes are soft and delicious, so it's impossible to eat just one.


Ingredients:

2 dL of aquafaba (water to cook chickpeas; you can use the liquid that comes with canned chickpeas)

1 pinch of salt

150 gr of sugar

150 gr of wheat flour

2 tsp of baking powder

4 Tbsp of ground flaxseed

1 Tbsp of powdered sugar


Instructions:

- In a large bowl, start by beating the aquafaba with a pinch of salt.

- When the aquafaba is white and soft, start to add the sugar little by little. Beat the aquafaba for a few more minutes, until firm peaks form.

- In another bowl, mix the flour, baking powder and ground flaxseed. Then, little by little, add this mixture to the bowl containing the aquafaba. Beat the aquafaba very well whenever you add a bit of flour.

- Pour the dough into a rectangular tray about 20 x 30 cm (8 x 11 in) lined with parchment paper. Place in a preheated oven at 180ºC (356ºF) for 12 minutes or until the cake is golden brown.

- Take it out of the oven. Taking the vertices of the parchment paper, take the cake out of the tray and place it on a cooling net. With a small sieve, sprinkle the powdered sugar over the cake. When the cake has cooled, cut it into small rectangles.
