Snow peas, parsnips and seitan stew

Comfort food can be prepared with what nature offers throughout the year. As this is the season of snow peas, parsnips and carrots, I invite you to try this sweetish stew. If possible, buy the vegetables at a local organic market, as that's the key to get a flavorsome dish!


Ingredients:

300 gr (10.58 oz) seitan

1 onion

2 garlic cloves

250 gr (8.82 oz) snow peas

1 large parsnip

3 large, ripe tomatoes

1 large carrot

2 tsp sweet chili powder

2 tsp ground cumin

1/2 tsp ground ginger

1 bay leaf

salt and black pepper to taste

olive oil

2 cups hot water


Instructions:

- Cut the seitan into cubes and reserve.

- Wash the peas very well and remove the pods. reserve.

- Wash the parsnips, carrots and tomatoes well. Peel the parsnips and carrots. Cut the parsnip into small cubes. Cut the carrot into thin slices. Cut the tomatoes into small pieces. Reserve.

- Peel the onion and garlic cloves and chop them very well. In a non-stick pan, put a generous drizzle of olive oil, add the onion and garlic and sauté them. Add the sweet pepper, cumin, ginger and bay leaf. Mix well and sauté the onion and garlic a bit more.

- Add the tomato, parsnip, carrot, peas and seitan to the pan. Season with salt and black pepper and let it cook for approximately 5 minutes.

- Finally, add two cups of hot water to the pan and cook for 20 minutes over medium heat, until the vegetables are tender.
