Pistachio and sun-dried tomato rolls

These pistachio and sun-dried tomato rolls are a super practical and tasty snack! And if you spread a little bit of humus on top, I bet they'll disappear in an instant.


Ingredients for the dough:

2 cups of whole wheat flour

1 cup of wheat flour

1 cup of crushed oat flakes

1 Tbsp of ground flaxseed

25 gr of fresh yeast

2 tsp of salt

1 tsp of dried oregano

1 tsp of dried chive

black pepper to taste

1 cup of vegetable milk (I used oat milk)

4 Tbsp of margarine


Ingredients for the filling:

3 Tbsp of tomato pulp

1 bunch of fresh parsley

1/2 tsp of sugar

1/2 tsp of salt

black pepper to taste

1/4 cup of pistachios

1/4 cup of pumpkin seeds

3 dried tomato petals


Instructions:

- In a bowl, mix the flours, the crushed oats, the ground flaxseed and the yeast broken into small pieces.

- Add salt, oregano, chives, pepper and mix everything with the help of a spoon.

- Melt the margarine and add it to the bowl. Add the milk to the bowl and mix everything very well with your hands until you obtain an homogeneous dough.

- Cover the bowl with a cloth and place it in the microwave (off), so that the dough rests for 30 minutes.

- While the dough is rising, prepare the filling. Cut the pistachios and pumpkin seeds coarsely and reserve them. Cut the dried tomato into small pieces.

- Wash the parsley and chop it very well. In a small bowl, place the tomato pulp, chopped parsley, sugar, salt and black pepper. Mix everything very well.

- On a lightly floured surface, roll out the dough with the help of a rolling pin (also sprinkled with flour) until the dough is thin (but not too much, otherwise it will start to break). You should get a rectangle of dough of approximately 50cmx30cm.

- Brush the tomato pulp over the dough. Then, distribute the pistachios, pumpkin seeds and sun-dried tomatoes evenly over the dough.

- Sprinkle your hands with flour. Roll the dough from the longest side. Cut the roll into slices approximately 2cm thick and place the slices on a tray lined with parchment paper. Cover the tray with a cloth and let it rest for 20 minutes.

- Preheat the oven to 180ºC (356ºF). Pour a drizzle of olive oil over each small roll and let them bake for about 25 minutes.
