Madeira wine cookies

These Madeira wine cookies are simply irresistible! Your coffee or tea break won't be complete without one of these, believe me.


Ingredients:

1 cup of almonds

1 cup of pitted dates

1 cup of whole wheat flour

1dL of Madeira wine

2 Tbsp of vegetable butter

2 Tbsp of agave syrup

1/2 cup of sultanas

1 coffee spoon (smaller than tsp) of cinnamon

1/2 coffee spoon (smaller than tsp) of ground ginger

1/3 cofee spoon (smaller than tsp) of salt


Instructions:

- Grind the almonds and the pitted dates.

- In a bowl, mix the whole wheat flour with the ground almond and the ground dates.

- In a small frying pan, heat the Madeira wine over medium heat, together with the vegetable butter, the agave syrup, the sultanas, the cinnamon, the ground ginger and the salt. Simmer for 5 minutes, stirring constantly. Let it cool slightly and then add it to the bowl.

- Mix everything very well with your hands, until you obtain an homogeneous dough.

- Form small balls of dough, flatten them with your hands and place them on a tray lined with parchment paper. Place in preheated oven at 180ºC (356ºF) for 15 minutes, or until the crackers are golden.
