Seitan "steaks" with coffee sauce

This is such an eye-catching dish and yet it is so simple to make! The seitan "steaks" with coffee sauce surprise everyone, even that friend or family member who is more skeptical about veganism. The mashed potato balls covered with almond sticks stand out for their beauty and uniqueness.
Ingredients for the mashed potato balls:
2 Tbsp of ground flaxseed
6 Tbsp of hot water
400 gr of mashed potatoes
salt, black pepper and nutmeg to taste
25 gr of wheat flour
50 gr of almond sticks
Ingredients for seitan "steaks":
350 gr of firm seitan
salt, black pepper and sweet pepper to taste
4 cloves of garlic
1 Tbsp of olive oil
1 Tbsp of vegetable oil
1 Tbsp vegetable margarine
1 tsp of instant coffee
1,5 dL of oat milk
Instructions for the mashed potato balls:
- In a small bowl, place one tablespoon of flaxseed flour and three tablespoons of hot water. Mix well and let it rest until it forms a gum. In another small bowl, repeat the process. You will thus obtain two flaxseed "eggs".
- In a large bowl, mix one of the flaxseed "eggs" with the mashed potato and season with salt, black pepper and nutmeg. Divide into five balls and place them on a plate.
- Coat the mashed potato balls with flour and put them back on the plate.
- Coat the mashed potato balls with a bit of the flaxseed "egg" that is still to be used and put them back on the plate. (If a flaxseed "egg" is not enough to coat all the balls, mix another tablespoon of flaxseed flour with three tablespoons of hot water.)
- Coat the mashed potato balls with almond sticks and place them on a tray lined with parchment paper.
- Take them to a preheated oven at 180ºC (356ºF) for about 20 minutes, or until the almond is golden.
Instructions for the seitan "steaks":
- Cut the seitan into four "steaks".
- Cut the garlic cloves into thin slices.
- On a plate, season the seitan "steaks" with salt, black pepper, sweet pepper and garlic. Let them rest for 30 minutes.
- In a frying pan, place the olive oil, the vegetable oil and the vegetable margarine and let it heat up well, without the margarine getting burnt.
- Remove the garlic from the "steaks". Place the steaks in the pan and fry each side for 1 or 2 minutes. Remove the "steaks" from the skillet and reserve them in a pyrex with a lid. Turn off the heat and let the mixture of olive oil, oil and margarine in the pan cool slightly.
- In a cup, dissolve the instant coffee in the vegetable milk and then pour it into the frying pan. Let the milk cook for 2 minutes, over low heat.
- Pour this sauce over the seitan "steaks" that are in the pyrex.
