Papaya salad

This papaya salad, fresh and easy, transports us to summer days full of sunshine and good energy!


Ingredients:

120 gr of cooked bulgur

40 gr of cooked white quinoa

40 gr of cooked red quinoa

180 gr papaya

zest of 1 lime

20 gr of hazelnuts

20 gr pistachios

10 gr of sunflower seeds

1/2 tsp of ground cumin

1 bunch of fresh parsley

1 bunch of fresh coriander

salt and black pepper to taste

1 drizzle of extra virgin olive oil

1 drizzle of Ume Su plum vinegar


Method:

- In a non-stick frying pan, place the hazelnuts, the pistachios and the sunflower seeds. Add a pinch of salt, a pinch of black pepper and the cumin and let it toast until the hazelnuts, pistachios and sunflower seeds are golden. Reserve and let it cool. Then, finely chop this mixture, so that you get small crunchy pieces.

- In a bowl, place the bulgur and the quinoa (already cooked and at room temperature).

- Peel the papaya and cut it into small cubes. Add the papaya to the bowl, as well as the lime zest.

- Wash the parsley and coriander, chop them finely and add them to the salad.

- Add the mixture of hazelnuts, pistachios and sunflower seeds to the bowl.

- Season with salt, black pepper to taste, a drizzle of olive oil and a drizzle of plum vinegar.
