Beetroot and orange salad

Fresh and juicy, this salad is as simple as it is delicious!
Ingredients:
1 orange
1 cooked beetroot of medium size
1 handful of toasted cashews
1 bunch of fresh parsley
1/2 Tbsp of olive oil
1/2 Tbsp of balsamic vinegar
salt and black pepper to taste
Instructions:
- Peel the orange and cut it into slices. Cut the cooked beetroot into slices.
- On a plate, arrange the orange slices and beetroot slices alternately.
- Chop the parsley well and pour it over the orange and beetroot slices.
- Chop the cashews roughly.
- Season with olive oil, balsamic vinegar, salt and pepper.
