Mediterranean pizza

I promise that you'll fall in love with this pizza dough! So much so, that you'll never want to order pizza again! Change the ingredients you put on top, and you have endless pizza varieties. Today I share a one with Mediterranean flavors.
Ingredients for the dough:
200 gr of water
50 gr of extra virgin olive oil
1 tsp of salt
25 gr of fresh yeast
200 gr of wheat flour
200 gr of whole wheat flour
Topping ingredients:
2 Tbsp of tomato pulp
2 black tomatoes
20 capers
20 black olives
1/4 green pepper
1/4 red pepper
15 gr of arugula
1 drizzle of olive oil
salt, black pepper, oregano and thyme to taste
Instructions:
- In a small saucepan, place the water, oil and salt. Heat slightly, without boiling.
- In a large bowl, place the flours and fresh crumbled yeast. Gradually add the liquids, wrapping everything very well. Let the dough rest for 30 minutes.
- On a floured surface, roll out the dough.
- Spread the tomato pulp on top of the pasta. Cut the tomatoes into thin slices and the olives into slices and distribute these ingredients evenly over the dough. Add the capers.
- Add the pepper cut into small cubes and, finally, add the arugula.
- Sprinkle with a drizzle of olive oil and season with salt, pepper, oregano and thyme.
- Take it to a preheated oven at 220ºC (428ºF) for 15 minutes, or until the pizza is golden.
