Lentil and jackfruit salad

Jackfruit is really versatile, it goes well in a myriad of dishes. Add jackfruit to a lentil salad like this one and you have a quick, colorful and flavorsome meal.


Ingredients:

3 Tbsp of olive oil

1 onion

1 garlic clove

1 bunch of parsley

1 bunch of coriander

1 big and ripe tomato

250 gr of jackfruit

6 pitted dates

1 cup of cooked brown lentils

1 cucumber

2 cauliflower foil pickles

salt and black pepper to taste


Instructions:

- Heat the oil in a nonstick frying pan.

- Chop the onion, the garlic clove and the coriander branch stalks and sauté these ingredients in the frying pan.

- Cut the tomato, the jackfruit and the pitted dates into small pieces. When the onion is soft and translucent, add these ingredients to the frying pan, along with the cooked lentils. Season with salt and black pepper and cook for about 6 minutes, stirring constantly.

- Pour everything into a bowl.

- Cut the cucumber and the cauliflower pickles into small pieces. Chop the parsley branch and what's left of the coriander. Add them to the bowl, mix everything very well and rectify the seasoning, if necessary. It's ready to serve!
