Chickpea, olive and mint burgers

Let the rare combination of olives and mint surprise your taste! These burgers are simple and delicious, so you'll always want to have some of them stored in the freezer.


Ingredients:

2 cups of cooked chickpeas

2 cups of cooked brown rice

3 Tbsp of olive oil

1 onion

2 garlic cloves

1/2 green pepper

15 black olives

1 Tbsp of fresh mint

1 tsp of thyme

1 tsp of saffron

salt and black pepper to taste


Instructions:

-Preheat the oven to 180ºC (356ºF).

- Chop the onion, the garlic cloves and the fresh mint.

- Cut the green pepper into small pieces. Cut the olives into small slices.

- In a frying pan, heat the oil. Add the garlic and the onion. When the onion is soft and translucent, add the chickpeas, the rice and the green pepper. If necessary, add a little more olive oil. Season with mint, thyme, saffron, salt and pepper. Let it cook for about 6 minutes, stirring constantly.

- Grind everything very well.

- Add the sliced olives to the dough and mix everything with your hands.

- Form balls of dough and flatten them with your hands, so that they are shaped like burgers. Arrange them on a tray lined with parchment paper and bake them in the oven for about 20 minutes.


Suggestion: Before taking the burgers to the oven, add on top of each of them a bit of crushed corn bread, with garlic, coriander and parsley. This topping will be crispy and appetizing!
