Chestnuts with turnip greens

This dish matches with winter days and with a fireplace! With chestnuts and turnip greens, it warms your body and soul.


Ingredients:

250 gr of chestnuts

250 gr of pumpkin

1/2 chayote

250 gr of turnip greens

5 Tbsp of olive oil

1 celery stalk

1 onion

2 garlic cloves

1 bay leaf

100 gr of mushrooms

3 dried tomato petals

salt, black pepper and thyme to taste


Instructions:

- Wash the chestnuts thoroughly and give each one a small cut. In a pan, bring salted water to boil and add the chestnuts. Make sure the chestnuts are totally submerged. Let it cook for 20 minutes. Drain well the water and peel the chestnuts. Reserve them.

- Peel and cut the pumpkin and chayote into small pieces. In a pan, bring salted water to boil and add the pumpkin and the chayote. Let it boil for 10 minutes. Drain the water into a bowl and reserve the cooked pumpkin and chayote.

- Wash the turnip greens and cook them for 8 minutes in a pan with water and salt. When they are cooked, drain the water well and reserve the greens.

- Wash the celery and the mushrooms. Cut them into small pieces.

- Chop the onion and the garlic cloves.

- In a pan add the oil, the onion, the garlic, the celery and the bay leaf. Sauté until the onion is soft and translucent. Then add the chestnuts, the pumpkin, the chayote, the greens and the mushrooms. Season with salt, black pepper, thyme and sun-dried tomatoes cut into small pieces. Let it cook on medium heat for 4 minutes, stirring frequently. If necessary, add a bit of the water used to cook the pumpkin and the chayote, so that the cooking doesn't stick to the bottom of the pan.


Suggestion: Serve with a slice of corn bread.
