Velvety beetroot soup

Sweet and velvety, that's how this beetroot soup is. Decorated with dried chives, croutons and a drizzle of olive oil, it is worthy of special occasions.
Ingredients:
2 medium-sized cooked beetroots
1 onion
1 clove of garlic
1 chayote
1/4 cauliflower
3 large carrots
1 medium sized orange sweet potato
1 small bunch of parsley
juice of 2 oranges
3 Tbsp of olive oil
water
salt and black pepper to taste
To decorate: croutons, chives and a drizzle of olive oil
Instructions:
- Put all the ingredients in a pan and add water until the vegetables are covered.
- As soon as it starts to boil, let it cook for 15-20 minutes.
- Grind everything very well.
- Add croutons, chives and a drizzle of olive oil before serving.
